Veggie Wraps

2 teaspoons olive oil
1/2 cup onion, chopped
1/2 cup carrots, shredded
1/2 cup red or green bell pepper, chopped
1-1/2 cups zucchini, chopped
1 cup spinach
1/4 teaspoon black pepper
4 tablespoons cream cheese
4 small tortillas

Heat oil in skillet over medium heat. Add onion, carrots and pepper and cook for three minutes. Stir in zucchini and cook another three minutes. Add spinach and season with pepper. Remove from heat and allow to cool before assembling the wraps.

Spread small amount of cream cheese on each tortilla. Add vegetables, roll tight and cut each wrap in half.

Serves 4
