1 10.5-ounce package lite silken tofu
1 tablespoon lemon juice
3 tablespoons ketchup
2 tablespoons sweet pickle relish
1 tablespoon minced parsley
1 tablespoon soy sauce
severaly twists of freshly ground black pepper
Place the tofu and lemon juice in a blender or foodprocessor and process until smooth. Place in a bowl and stir in the remaining ingredients. Chill for at least 2 hours before using.
NOTE:
This thick salad dressing is similar to Thousand Island dressing.
