125 g red cabbage, finely shredded 1/4 lb
125 g bok choy cabbage, finely shredded 1/4 lb
125 g green cabbage, finely shredded 1/4 lb
2 carrots, peeled & grated
1 onion, finely sliced
2 red apples, cored & chopped
50 ml orange juice 4 tbsp
2 celery stalks, finely sliced
50 ml corn kernels 1/4 cup
30 ml raisins 2 tbsp
50 ml plain yogurt 4 tbsp
15 ml fresh parsley, chopped 1 tbsp
salt & pepper to taste
In a large bowl; add cabbages, carrots, onion and apples. Add orange juice, celery, corn and raisins. Mix well.
In a small bowl; mix yogurt, parsley, salt and pepper. Pour over cabbage mixture. Toss and serve.
