1/4 cup soy sauce
2 tbspns mirin
2 tbspns dry sherry or sake
2 tbspns brown sugar
2 tspns grated fresh ginger
This recipe uses Australian measures.
Combine all ingredients, stirring till sugar is dissolved. Add chicken and marinate at least two hours covered. Stir occasionally.
NOTE:
Australian tbspn = 20mls, US tbspn = 15 mls
