Sweet Potato Pudding

1 cup granulated sugar
1/8 cup applesauce
1 tablespoon butter, softened
1 cup milk
1 large egg
2 cups grated sweet potato
1 teaspoon vanilla extract

Combine sugar, applesauce and butter in a large mixing bowl. Beat the egg and add it to the sugar mixture along with the milk, sweet potato and vanilla. Stir to mix well. Transfer into a greased or sprayed 5x9x2-inch baking dish.

Bake in a preheated 350°F. oven, 1 hour. Stir 2 or 3 times to keep from burning. Bake until brown on top.

Makes 6 servings.
