Stuffed Green Peppers

500 g ground chicken or turkey 1 lb
125 ml cooked rice 1/2 cup
125 ml carrot, finely chopped 1/2 cup
1 small onion, finely chopped
45 ml fresh parsley, finely chopped 3 tbsp
1 clove garlic, minced
salt & pepper to taste
1 small can tomato sauce
2 large green peppers
125 ml cheddar cheese, grated 1/2 cup

In a bowl, combine chicken, rice, carrot, onion, parsley, garlic, salt, pepper and tomato sauce; blend thoroughly.

Cut peppers in half lengthwise. Discard seeds and membranes. Fill with chicken and vegetable mixture.

Place peppers in microwaveable dish so they fit snuggly. Cover, vent and cook on high power 25 to 28 minutes. Remove from casserole dish and sprinkle with cheese. Let stand 5 to 10 minutes before serving.
