Makes 18 servings
1 pint strawberries
1 angel food cake, prepared
3/4 cup Snapple diet strawberry kiwi soda
3 packages equal
1 3 ounce package diet strawberry Jell-O
32 ounces fat free cream cheese, at room temperature
1 cup cold water
1/2 cup granulated sugar substitute
1 teaspoon vanilla
2 envelopes unflavored gelatin
Tear up angel food cake into small pieces. I make the cream cheese mixture in 2 batches. Beat cream cheese with mixer until fluffy; add sugar substitute and vanilla and beat. In a small sauce pan sprinkle gelatin over 1/4 C. cold water. Let set for 1 minutes. Over low-heat stir with wire whisk until all the gelatin is dissolved. Gradually add to cream cheese mixture and beat. Carefully beat in remaining 3/4 C. water. Pour cram cheese mixture over angel food cake pieces and fold until combined. Pour into 13 X 9 inch baking pan, spreading the top until smooth, (will still be bumpy but do the best you can). Chill until firm.
Slice the strawberries into thin slices and mash one layer at a time, until they equal one cup solids and liquid. Mix in the 3 packets of equal. In a small sauce pan, bring strawberry soda till boiling. Sprinkle in Jell-O and whisk vigorously till dissolved, at least 2 minutes. Stir into strawberry mixture with whisk until well combined. Pour over top of chilled cheese mixture. Chill several hours till set.
