125 ml green pepper, chopped 1/2 cup
1 small onion, thinly sliced
50 ml celery, thinly sliced 1/4 cup
1 garlic clove, minced
750 ml tomato, peeled & coarsely chopped 3 cup
15 ml red wine vinegar 1 tbsp
10 ml sugar 2 tsp
.5 ml pepper 1/8 tsp
In large lightly greased skillet, heat on medium heat until hot. Add pepper, onion, celery and garlic. Saute 5 minutes or until vegetables are tender. Add tomato, vinegar, sugar and pepper. Bring to a boil. Cover, reduce heat and simmer 15 minutes, stirring occasionally.
