4 ounces flour
4 ounces butter
2 teaspoons baking powder
4 ounces cornflour
1 teaspoon grated lemon rind
1 large apple (more if desired)

sugar for apples
4 ounces sugar
lemon juice
2 eggs
1 teaspoon cinnamon
Peel and slice apple, add sugar to taste, lemon rind and water; cook slowly until soft; stand aside to cool. Cream butter and sugar, add a little lemon juice and eggs and mix well. Fold in dry ingredients. Put half the sponge mixture into a casserole dish, spread apple mixture evenly over the mix. Cover with remaining sponge mixture. Bake in moderate oven 15 – 20 minutes. Serve with cream.
