Southwest Turkey Rice Pancake

Serve this crispy rice pancake with fresh orange sections and Nestle Toll House Chocolate Chip Cookie Bars for dessert. Beef, pork or turkey can be substituted for chicken.

2-1/2 cups cooked white rice
2 large eggs
1/4 cup chopped fresh cilantro or parsley
2 tablespoons butter, melted
1 (16 ounce) jar ORTEGA Salsa – Homestyle Recipe (Mild)
2 cups diced cooked turkey
1 cup shredded cheddar cheese
1/2 cup sliced ripe olives
1/2 cup sliced green onion

Combine rice, eggs, cilantro and butter; place in large nonstick skillet. Cook over medium-high heat for 3 to 5 minutes or until mixture begins to set (do not stir). Reduce heat to low; cook for 20 minutes or until mixture is dry on top. Flip so browned side is up.

Top with salsa, chicken, cheese, olives and onion; cover. Continue to cook for 10 minutes or until cheese is melted.

Makes 6 servings.
