South American Salsa

Try this, if you can find the ingredients.

In the blender:

4 large or 8 small spring onions/green onions/scallions
6 cloves of garlic
3/4 cup packed fresh cilantro (including roots, please)
8 jalapeños, or the equivalent in other hot pepper, fresh or canned, seeds removed 12 tomatillos (also called miltomate), fresh or canned. Figure a pound, if you’re weighing. Maybe regular old green tomatoes will work if you can’t get tomatillos. If you use green tomatoes, you might also try adding six green olives, for astringency.
1/4 cup distilled white vinegar (or lemon juice)
Tablespoon salt

Blend until blended. It’s a good condiment for meats and black beans, as well as tacos, of course.
