4 medium potatoes
45 ml butter, melted 3 tbsp
45 ml fresh chopped herbs (parsley, chives, thyme, sage) 3 tbsp
or
15 ml dried herbs (as above) 3 tsp
50 ml cheddar cheese, grated 1/4 cup
Scrub and rinse potatoes. Cut potatoes into thin slices but not all the way through. Hint: use a handle of a spoon to prevent knife from cutting all the way. Put potatoes in a baking dish, fanning them out slightly. Brush with butter. Sprinkle with herbs. Bake potatoes at 425 F (220 C) for about 50 minutes. Remove from oven; sprinkle with cheese. Bake potatoes for another 10 to 15 minutes until lightly browned, cheeses are melted and potatoes are soft when checked.
