Seafood, Tomato and Feta Bake

1 cup onion, chopped
1/2 cup water
2 cups tomato, chopped
2 scallion, chopped
1 cup cooked rice
4 ounces cod fillet, cubed
or other lean white fish fillets
5 ounces feta cheese, crumbled
8 ounces medium shrimp, cooked
1/3 cup fresh bread crumbs

Preheat oven to 350. Coat a 2-quart casserole with no-stick spray.

Coat a large no-stick frying pan with no-stick spray. Add onions and water. Cook over medium-high heat, stirring occasionally, for 3 to 4 minutes. Add tomatoes, scallions and rice. Lower heat to medium and cook, stirring occasionally, for 5 minutes.

Spread half of the rice mixture in casserole. Top with fish and sprinkle with half of the feta. Add rest of rice mixture.

Cover and bake for 25 minutes. Top with shrimp and remaining feta. Sprinkle with bread crumbs. Bake, uncovered, for 15 to 20 minutes, or until cheese has melted and bread crumbs are crisp and brown.
