Scampi Alla Veneziana (Prawns Venetian Style)

1 pound (500g) fresh prawns
1 bay leaf
1/2 cup (125ml) olive oil
2 very fresh lemons, cut into wedges

Serves 4

Cook prawns and bay leaf in boiling water for 3 minutes only. Discard bay leaf. Shell and devein prawns, leaving the tails. Chill. Serving the prawns in a good looking clear or white bowl nestled in crushed ice makes a nice show at the table. Offer each person their individual small bowl of olive oil and lemon wedges.
