1 cup Northwest fresh sweet cherries, pitted
4 tablespoons water, divided use
1/4 cup dry red wine
3 tablespoons honey
2 tablespoons red wine vinegar
1 teaspoon fresh thyme leaves
1/2 teaspoon dry mustard
Salt to taste
2 teaspoons cornstarch
Combine cherries, 3 tablespoons water and all remaining ingredients except cornstarch. Cover and simmer gently 10 minutes.
Combine cornstarch and remaining water; stir into cherry mixture. Cook and stir until mixture thickens; simmer 1 minute.
Makes about 1 1/4 cups.
Serving Tip: Serve with fish or poultry.
