Rouille Sauce

1 slice white bread, crustless
2 cloves garlic
1 hot red chili peppers
2 egg yolks
1 cup olive oil
salt, to taste

Soak bread in water. Squeeze out water. Mince garlic and pepper to a paste and add salt Add bread and whip mixture. Add yolks and then oil in a stream working like a mayonnaise or put it all in a blender add oil in a stream until thick.

NOTE:
Serve with fish soup on toast
