Red Delicious Apple Stuffed Squash

1 small buttercup squash (1 lb.)
1 cup chopped Red Delicious apples
2 tablespoons brown sugar
2 tablespoons butter or margarine
1 teaspoon lemon juice
dash of nutmeg

Cut squash into fourths, remove seeds and fibers. Place squash pieces, skin side down in a shallow baking dish. Mix remaining ingredients together and spoon into centre of squash. Cover with wax paper and microwave on high (550 watts) for 5 minutes. Turn baking dish during cooking to ensure even cooking. When squash is tender, spoon juices over top and serve.

Serves 4.
