Pork with Peanut Sauce

6 Loin pork chops; (about 8 oz each)
1 tablespoon Vegetable oil
1/3 c Onion; finely chopped
1 Clove garlic; minced
2 tablespoon Green chilies; chopped
1 can (14 oz) tomatoes; drained and chopped
1 tablespoon Tomato paste
1/4 teaspoon Ground cumin
1/8 teaspoon Oregano
1/8 teaspoon Ground red pepper
2/3 c Unsalted peanuts; chopped
Cherry tomatoes
Arugula for garnish; optional

Yield: 6 Servings

Trim fat from chops. In large skillet, heat oil over medium heat. Brown chops on both sides. Remove from skillet. Add onion and garlic, and cook, stirring occasionally 3 to 4 minutes until soft. Add chilies. Cook 1 minute. Stir in tomatoes, tomato paste and seasonings. Return chops to skillet. Cover and simmer 25 minutes. Stir in peanuts. Simmer 10 minutes longer. To serve, spoon sauce over chops. Garnish with cherry tomatoes and arugula, if desired.
