2 cups basmati rice
3/4 teaspoon salt
1 tablespoon unsalted butter
2-2/3 cups water
Wash rice in several changes of water until water runs clear and drain. Pour 5 cups of fresh water over the rice and let it soak for a half an hour and drain again, thoroughly.
Combine rice, salt, butter and 2-2/3 cups water in a heavy pot and bring to a boil. Cover and turn heat to low and let simmer for 20 minutes. Lift lid, mix rice gently and quickly with a fork and cover again. Cook for 5-10 minutes or until tender.
NOTE:
I recommend a pot with a tight-fitting lid. If your pot doesn’t have one, use a sheet of aluminum foil underneath to help seal it off a bit more.
