Perfect Mashed Potatoes

6 medium red or yukon gold potatoes
75 ml milk 1/3 cup
50 ml margarine or butter, softened 1/4 cup
2 ml salt 1/2 tsp
dash of pepper

Boil potatoes in small amount of water until tender. Mash potatoes in medium bowl until no lumps remain. Add milk in small amounts, beating after each addition (amount of milk needed to make potatoes smooth and fluffy depends on kind of potatoes used). Add butter, salt, pepper and chives. Beat vigorously until potatoes are light and fluffy. If desired, dot with butter.
