125 ml frozen apple juice concentrate, undiluted
75 ml light salad oil
15 ml lemon juice
1 head butterleaf lettuce
3 large pears
75 ml chopped pecans
225 g harvati cheese, cut into small cubes
In a small container with lid; mix apple juice, oil and lemon juice. Shake well and set aside.
On serving plates, with lettuce equally divided; place half a pear per serving, fanning over lettuce. Sprinkle one tablespoon per serving of pecans and cubes of cheese.
Drizzle dressing over salad just before serving.
