Pear Chutney

From the East Indies, chutney is a spicy condiment that contains fruit, vinegar and spices.

2 tablespoons butter
1/2 cup firmly packed brown sugar
1/2 medium-size sweet onion, chopped
1 jalapeño pepper, seeded and chopped
2 medium pears, peeled and chopped
1 teaspoon salt
2 tablespoons balsamic vinegar
2 tablespoons lemon juice

Melt butter in a small skillet over medium-high heat. Add brown sugar, onion, and jalapeño pepper, and sauté 5 to 6 minutes or until mixture is caramel colored.

Add pears and next 3 ingredients; reduce heat, and simmer 6 to 8 minutes.

Makes 1 1/2 cups.
