14 ounces ROYAL Dessert Excellence Lemon Mousse Mix
1 qt milk
1 teaspoon ginger
1-1/2 qt canned sliced peaches
In mixer bowl, using wire whip, combine mousse mix, cold milk and ground ginger until blended. Beat at medium speed for 2 minutes.
Scrape down side and bottom of bowl. Beat at high speed for 5 minutes more or until soft peaks form.
Fold in drained, chopped canned peaches.
Using #8 scoop (1/2 cup), portion into 36 dessert dishes. Cover; chill 1 hour.
Mousse can be loosely covered and stored in refrigerator for up to 1 day.
VARIATION:
Mousse can be spread in 1 (12 x 10 x 2-1/2-inch) half steam table pan.
