Pasta with Apples and Cranberries

350 g pasta 3/4 lb
225 g ham, cooked & cubed 1/2 lb
30 ml butter 2 tbsp
12 green onions, thinly sliced 12
2 green apples, chopped
1 ml nutmeg 1/4 tsp
125 ml apple juice 1/2 cup
250 ml half and half cream 1 cup
250 ml cheddar cheese, grated 1 cup
125 ml dried cranberries 1/2 cup
15 ml fresh sage, chopped 1 tbsp

Cook pasta according to package directions. Drain and keep warm.

In heavy saucepan; melt butter over medium heat. Add ham, onions and apples, cooking until golden brown. Set aside.

To the same pot; add nutmeg and apple juice and let reduce for 2 minutes. Add cream and further reduce. Add cheese and cranberries. Cook over low heat until sauce is smooth. Add sage.

Add pasta, ham and apple mixture to the sauce. Combine well.

Serves 4
