Parmesan Tomatoes

125 ml mayonnaise
125 ml Parmesan cheese, grated
15 ml lemon juice
5 ml lemon zest, finely grated
50 ml onion, finely chopped
1 clove garlic, minced
4 medium tomatoes

In a small bowl; combine mayonnaise, cheese, lemon juice, lemon zest, onion and garlic. Blend thoroughly.

Cut tomatoes in half and scoop out excess seeds. Place cut side up on baking sheet. Place 1 tablespoon (15 ml) mayonnaise mixture in tomato halves.

Place tomatoes under preheated broiler for approximately 5 minutes or until tops are nicely browned.
