6 eggs
2 jalapeno peppers, seeded & chopped
250 ml sour cream 1 cup
175 ml sharp cheddar cheese 3/4 cup
175 ml jalapeno monterey jack cheese, shredded 3/4 cup
salt & pepper to taste
In a large bowl, whisk together eggs, jalapenos, sour cream, cheddar and monterey jack cheeses. Season with salt and pepper. Transfer to lightly greased 9 inch (23 cm) square baking dish. Cover and refrigerate overnight.
In the morning, uncover eggs and bake in preheated 350 F (180 C) oven for 1 hour or until set and lightly browned.
