Orange Glazed Beets

500 g medium beets 1 lb
15 ml butter 1 tbsp
15 ml brown sugar 1 tbsp
5 ml cornstarch 1 tsp
1 ml orange peel, finely shredded 1/4 tsp
50 ml orange juice 1/4 cup

Cut off all but 1 inch (2.5 cm) of beet stems and roots. Wash well. Do not peel. Cook, covered, in boiling water 35 to 45 minutes or until tender. Drain and cool slightly. Slip skins off beets and slice.

Meanwhile, melt butter in medium saucepan. Stir in brown sugar and cornstarch. Stir in orange peel and orange juice. Cook and stir until thickened and bubbly. Cook and stir for 2 minutes more. Stir in cooked beets and heat through.
