8 beets, scrubbed
45 ml unsalted butter 3 tbsp
20 ml apple cider vinegar 4 tsp
1 orange, finely zested
2 ml salt 1/2 tsp
1 ml black pepper 1/4 tsp
15 ml fresh chives, chopped 1 tbsp
Preheat oven to 350 F (180 C). Trim beets, leaving some of the stem. Place in baking pan and fill with a little water. Cover with foil and bake 45 minutes. Remove foil and bake another 30 minutes or until beets are tender. Allow to cool slightly; peel and slice; set aside.
Melt butter in a large skillet over low heat. Add beets and toss to coat with butter. Sprinkle with vinegar, orange zest, salt and pepper. Cook, tossing gently, until beets are heated through, about 3 to 4 minutes. Transfer beets to a serving bowl, sprinkle with chives and serve immediately.
