Onion, Red Pepper and Mango Salsa

500 ml mango, chopped 2 cup
250 ml red pepper, chopped 1 cup
150 ml onion, chopped 2/3 cup
50 ml fresh parsley, chopped 1/4 cup
25 ml fresh lime juice 2 tbsp
20 ml olive oil 4 tsp

Mix all ingredients in small bowl. Season with salt and pepper. Recipe can be made 6 hours ahead. Cover and chill. Serve with beef or poultry.
