Yield: 12 servings
1-1/2 cup Cake flour
2 teaspoon Baking powder
1/2 teaspoon Salt
1 each Egg; beaten
2/3 cup Sugar
1/3 cup Milk
3 tablespoon Butter
1 teaspoon Vanilla
1 pt Huckleberries
Sift flour, baking powder, and salt together; add sugar and sift again. Add to the egg alternately with the milk, gradually. Add the vanilla. Beat well, then fold in huckleberries. Pour into an 8″ cake pan and bake at 400 F. about 40 minutes, or until a toothpick tests clean.
