Spiral pasta
1 tablespoon olive oil
2 cloves garlic, slivered
1 c. zucchini, sliced
1/4 c. grated mozzarella
2 eggs, lightly beaten
freshly ground black pepper
Cook pasta until tender. Meanwhile, heat oil in a pan, add garlic and sauté for 2-3 minutes. Add zucchini, cook until brilliant green and still firm – not soggy! Drain pasta. Add mozzarella, eggs and pepper. Stir well, add zucchini mixture. Serve immediately.
