Mexican Onion Rice

25 ml oil 2 tbsp
250 ml uncooked rice 1 cup
1 can stewed tomatoes
1 medium onion, minced
250 ml green pepper, chopped 1 cup
5 ml salt 1 tsp
5 ml chili powder 1 tsp
500 ml water 2 cup

In a large skillet; heat oil and add rice. Saute, stirring, for 5 minutes or until evenly browned. Add all ingredients and mix well. Cover with a lid and simmer until rice is tender, approximately 30 minutes. Remove lid and allow liquid to evaporate.

Serves 6
