Medivnyk (Honey Cake)

125 grm Butter
5 Eggs separated
400 grm Honey
100 ml Strong Coffee
500 grm. Plain Flour
2 tsp Baking Powder
1 Orange – juice and Rind
1/2 tsp. Grated Nutmeg
1/2 tsp Ground Cloves
1 tsp Cinnamon
1/2 tsp. Salt

Beat the butter with the egg yolks until light and fluffy.

Fold in the honey, orange juice and rind, add the coffee.

Sift the flour with the baking powder and spices and gradually stir into the butter and egg mixture

Beat the egg whites until stiff and then carefully fold into the cake batter

Grease a square baking tin or loaf tin generously with butter and dust with flour.

Pour in the mixture and level (tap the tin on the worktop to level out)
Bake in a preheated oven at 340f / 170c for 50-60 minutes. If browning too quickly cover with foil.

Test if it is done by putting a skewer in the middle, if it comes out clean the cake is done.
