1 cup finely diced ripe mango
1/2 cup finely diced red bell pepper
1/3 cup finely diced red onion
1 tablespoon finely chopped fresh mint
1 jalapeno, seeded and minced
1/2 teaspoon minced fresh ginger
2 tablespoons fresh lemon juice
1 tablespoon olive oil
In medium bowl, mix mango, bell pepper, onion, mint, jalapeno, ginger, lemon and oil. Cover and refrigerate until serving time.
