Makes 12 servings
2 peaches, ripe, quartered, pits removed
1/2 cup water
1 teaspoon granulated sugar replacement, or 1/2 packet
1 tablespoon shallot, chopped
2 tablespoons champagne vinegar
1/2 teaspoon sesame oil
1 tablespoon hot sauce
1 teaspoon fresh lemon juice
3 tablespoons canola oil
Soak wood chips in water and place over hot coals. Smoke peaches in a covered grill over very low indirect heat with a small pan of water directly under the peaches. Smoke 20 to 30 minutes or until peaches start to turn a medium brown. Remove from grill and let cool. Chop peaches into small pieces and cook in a small pot with 1/2 cup water until softened. In a blender, combine peaches and remaining ingredients. Use as a dressing for cooked veggies.
