Low Fat Mexican Citrus Salad Dressing

2 teaspoons grated orange rind
1/2 cup orange juice
2 tablespoons white wine vinegar or distilled white vinegar
2 tablespoons fresh basil, minced or 2 teaspoons dried basil
1 jalapeño pepper, seeded and minced
1 tablespoon honey
2 teaspoons Dijon mustard
1 teaspoon cumin, ground
2 cloves garlic, pressed

In a non metal bowl whisk all the ingredients. Cover and chill for up to 4 hours.
