1 unripe, medium mango, peeled and grated
1/2 cup grated carrot
1 teaspoon minced, fresh ginger
1 clove garlic, minced
2 red wine vinegar
2 tablespoons firmly packed, light brown sugar
2 tablespoons chopped cilantro or parsley
1 tablespoon lime juice
60 fat-free wheat crackers
In a small bowl, combine mango, carrot, ginger, garlic, vinegar, brown sugar, cilantro or parsley, and lime juice. Cover; chill at least 1 hour to blend flavors. Serve with crackers.
