Low Fat Bulgur Fruit Salad (high fiber)

1 cup bulgur, uncooked
2 cups boiling bouillon
1 cup honeydew melon, diced
1 cup grapes
1 cup raspberries
1 cup jicama, cut into 1/4″ match sticks (or substitute celery)
1/4 cup fat-free honey mustard dressing, or to taste

Put the bulgur in a bowl and stir in the boiling bouillon. Let stand 15 minutes or until most of the liquid is absorbed. Chill if desired. When ready to serve, stir in the remaining ingredients.

Makes 6 to 8 servings.
