2 onions, sliced
1 teaspoon olive oil
2 lbs. skinless, boneless chicken breasts, cut in strips
3-4 cloves garlic, crushed
juice of 1/2 lemon
1/2 cup white wine or fat-skimmed chicken broth
1 19-oz. can crushed tomatoes
1 tablespoon oregano
pepper to taste
Sauté onion in olive oil until clear. Add chicken and toss over high heat until coated. Add all remaining ingredients. Simmer, covered, 8-10 minutes. Serve over rice or noodles.
