3 cups dates, pitted and chopped
1 1/4 cups water
3/4 cup butter
1/2 cup honey
1 3/4 cups all-purpose flour
1 1/2 cups quick-cooking oats
1/2 teaspoon baking powder
Preheat oven to 350°F. Grease and flour an 8-inch square baking pan; set aside.
Heat dates and water over low heat in a small saucepan, stirring until smooth and thick; set aside to cool.
In a medium mixing bowl, cream together butter and honey. Add flour, oats and baking powder; mix thoroughly. Flatten half into pan.
Spread the date mix over this and top with the remaining oat mixture. Bake for 30 minutes. Cool before cutting into bars.
Makes 24 bars.
