Herb Speckled Pasta

2-1/4 cups all purpose flour
3 eggs
3/4 teaspoon salt
1 tablespoon olive oil
1 tablespoon lukewarm water or milk
2 tablespoon finely chopped fresh parsley
1 tablespoon finely chopped fresh marjoram, or 1 teaspoon dried
2 tablespoon finely chopped fresh basil, or 1 teaspoon dried
1 tablespoon finely chopped fresh thyme, or 1 teaspoon dried

In a large bowl place the flour and make a well in the center. Add the eggs, salt, olive oil, and water or milk. Then add the herbs using your hands, work the dough together. Keep working till the dough forms a ball. Turn the dough onto a lightly floured board and knead, adding more flour if needed, until smooth. The kneading will take about 10 min. Cover with a bowl or cloth and let the dough rest for 30 min. Use a manual pasta machine and cut the pasta into fettuccine or any other string pasta you wish. A butter, olive oil or tomato sauce is good with this recipe.
