Healthy Cole Slaw

2 cups Red cabbage; shredded
2 cups Green cabbage; shredded
1/2 medium English cucumber; thinly sliced
1/2 medium Red onion; thinly sliced
1 large Garlic clove; minced
1 medium Red pepper; thinly sliced
1 medium carrot; thickly shredded
1/2 teaspoon Salt
1/2 teaspoon Black pepper
2 1/2 tablespoons Sugar
2 1/2 tablespoons Cider Vinegar
1 tablespoon Extra virgin olive oil
1 tablespoon Water
1 tablespoon Fresh dill

In a large bowl, combine cabbage, cucumber, onion, garlic, red pepper and carrot; set aside.

In a small bowl, combine remaining ingredients; pour over vegetables and toss to mix and coat. Chill in refrigerator, for about one hour, tossing once or twice.

Yields 16 about 1/2 cup serving.
