Green Herb Sauce

1 cup Finely chopped onion
1/2 cup Chopped fresh Watercress leaves
1/2 cup Coarsely chopped Spinach leaves
2 tablespoon Chopped fresh parsley
2 tablespoon Chopped fresh chives
1 cup Olive oil
6 tablespoon Red wine vinegar

Blend onion, watercress, spinach, parsley and chives in a food processor. Add oil and vinegar and blend well. Season with salt.
