6 Cornish game hens
2-1/2 teaspoons grated tangerine or orange peel
2 cups tangerine or orange juice
2 tablespoons cornstarch
3 tablespoons hoisin sauce
1/2 teaspoon crushed red chilies
Mix basting ingredients together and pour over hens in baking pan. Bake in a 450 oven, basting every 10 minutes, 30 to 40 minutes. Place birds on plates. Skim fat from sauce and pour sauce into a bowl.
Makes 6 servings.
