Ginger Sweet Potatoes

4 medium sweet potatoes
125 ml milk 1/2 cup
1 fresh ginger, peeled & grated (1 inch / 2.5 cm)
salt & pepper to taste

Prepare potatoes for baking. Bake in preheated 400 F (200 C) oven for 45 minutes. Half the potatoes lengthwise and scoop out pulp into a medium size bowl. Stir in milk, ginger, salt and pepper. Beat with electric mixer at low speed until blended and smooth.
