1-1/2 cups heavy whipping cream
3 ripe bananas, mashed
4 tablespoons powdered sugar
2 tablespoons crystallized ginger, chopped fine
Whip the cream until soft peaks form. In a separate bowl or food processor, mash the banana with the sugar. Add the crystallized ginger pieces. Fold the banana-ginger mixture into the whipped cream and place in a pastry bag. Pipe into the profiteroles.
