1-1/2 lb. squid, cut into 1/2″ strips
3 tablespoons olive oil
1 onion, chopped
1 tablespoon parsley, chopped
1 clove garlic, minced or mashed
1/2 teaspoon rosemary
1/4 lb. sliced mushrooms
2 tablespoons tomato sauce
1/2 cup water
Saute onion in olive oil until translucent. Add parsley, garlic, rosemary, and mushrooms. Cook 5 minutes. Add tomato sauce, water, and squid. Cover and cook slowly 20 minutes.
