1 kg. potatoes,
2 aubergines,
150 gr. primosale cheese,
4 eggs,
150 gr. grated caciocavallo cheese,
100 gr. breadcrumbs,
parsley,
olive oil,
salt and pepper.
Boil potatoes, peel and sieve them; add grated caciocavallo cheese, minced parsley, 2 eggs and a couple tablespoons of oil. Work the mix until soft.
In a tin, previously greased with oil and dust with breadcrumbs, put a layer of potatoes, sliced eggs, chopped primosale, fried aubergines in pieces; cover with some more potatoes mix, dust with breadcrumbs, pour very little oil and cook in preheated oven for about half an hour.
