8 garlic cloves
2 ml olive oil 1/2 tsp
4 medium potatoes
125 ml milk 1/2 cup
10 ml fresh parsley, chopped 2 tsp
5 ml green onions, chopped 1 tsp
salt & pepper to taste
In a small ovenproof dish; toss garlic with olive oil; roast in preheated 350 F (180 C) oven for 20 to 25 minutes or until lightly browned. Peel potatoes; boil until tender. Mash potatoes with garlic. Add milk, parsley, onion, salt and pepper; mash until soft and creamy. Add more milk if necessary for desired consistency.
