225 g dried ziti or mostaccioli 8 oz
1 medium onion, thinly sliced
2 garlic cloves, minced
15 ml olive oil 1 tbsp
750 ml medium tomatoes, seeded & coarsely chopped 3 cup
5 ml salt 1 tsp
2 ml pepper 1/2 tsp
750 ml baby spinach 3 cup
50 ml pine nuts or slivered almonds, toasted 1/4 cup
30 ml gorgonzola, crumbled 2 tbsp
Cook pasta according to package directions. Drain and keep warm.
Meanwhile, in large skillet, cook onion and garlic in hot oil over medium heat until onion is tender. Add tomatoes, salt and pepper . Cook and stir over medium-high heat about 2 minutes or until tomatoes are warm and release some of their juices. Stir in spinach. Heat just until greens are wilted.
To serve, top pasta with tomato mixture. Sprinkle with pine nuts and cheese.
